Ross’ Tattie Peel Soup
Leftover tattie peel

Ingredients
  • 30g butter
  • 2 medium onions, diced
  • Bay leaf
  • Salt & Pepper
  • 500 ml milk
  • 500ml chicken/veg stock
Steps
  1. Melt about 30g of butter in the pan and add two medium onions, diced, a bay leaf and a food pinch of salt.
  2. After about ten minutes add the tottie peel and give it a good mix in for about a minute.
  3. Then add 500ml whole milk and 500ml chicken or veg stock.
  4. Season it well with salt and pepper.
  5. Bring it to the boil and then let it simmer for at least ten minutes, til the peel softens.
  6. Take it off the heat and either blitz it in a blender or with a handheld.  Return it to the heat and then voila.
  7. You can chuck a bit of fresh parsley on it to serve, or sprinkle some sage.  Crispy bacon bits are awesome too.
