Butter mayonnaise

Ingredients
  • 1 egg separated
  • 4oz butter
  • 2 tsp ACV
  • ½ tsp Dijon mustard
Steps
  1. Heat butter in microwave 1 min. It’ll be bubbling hot when you take it out.
  2. Put egg yolk, mustard and ACV in stick blender jar and blend for a few seconds.
  3. Add the hot butter bit by bit (about 6 times) blending thoroughly after each addition.
  4. When all emulsified, pour egg white on top and blend again, going up and down with blender. It’ll expand and go frothy.
  5. Refrigerate when cool.
