Ingredients
  • 140g / 1 cup + 1 tbsp plain flour
  • 60g / ¼ cup + 1 tbsp caster sugar
  • ½ tsp salt
  • 1½ tsp baking powder
  • 1½ tsp ground cinnamon
  • 90ml / ⅓ cup + 2 tsp soya or rice milk
  • 50ml / ¼ cup plain, vanilla or coconut soya yoghurt
  • 1 tsp vanilla extract
  • 2 medium apples, peeled, cored and finely chopped
  • Light rapeseed or other flavourless oil, for deep-frying
  • 1 quantity of Maple Cinnamon Glaze (see page 43)
