  • 12 8” large flour tortillas
  • 8 ounces Pepperjack cheese, shredded
  • 4 ounces Colby Jack cheese, shredded
  • 6 oz can sliced olives, drained
  • 2 scallions, finely chopped
  • 2 tablespoons chopped cilantro
