Ingredients
- 2 Tbsp olive oil
- 1 tsp black pepper
- 1 lb ground beef
- 1 lb ground lamb
- 1 large onion, finely diced
- 6 large carrots, finely diced
- 2 cups frozen peas
- 6 to 8 sprigs fresh thyme, finely chopped
- 4 Tbsp flour
- 2 Tbsp butter
- 2 glasses red wine
- 4 Tbsp tomato paste
- 4 Tbsp Worcestershire sauce
- 2 cups chicken stock
- large quantity mashed potatoes
- 1 egg, beaten
- grated parmesan cheese (optional)
Steps
- make mashed potatoes
- preheat oven to 400F
- saute carrots and onion in olive oil for 2 min, then add meat
- season with pepper and thyme
- cook until browned and then drain off fat
- add butter and peas
- sprinkle with flour and stir to combine
- add tomato paste, wine, and Worcestershire sauce
- let reduce slightly, then add chicken stock
- allow to reduce until you have a thick gravy
- season to taste
- remove from heat
- grease (9x13) oven proof dish with butter and add meat mixture
- spoon or pipe mashed potatoes over the top, brush with egg, and sprinkle with parmesan cheese if desired
- bake for 20 minutes or until potatoes start to brown on top

- i doubled this recipe because a single recipe barely fed my family of 5
