Lemon-Basil Squash Pasta
Ingredients
  • 2 tablespoons neutral oil
  • 2 tablespoons flaky sea salt; can use kosher or even table salt; just be mindful that table salt will be much saltier, so only need a touch when garnishing
  • 1 lemon
  • 1 large delicata squash; aside from spaghetti, most any squash will do, and you can also use zucchini
  • 3 tablespoons plant-based or dairy butter
  • 1 tablespoon maple syrup or granulated sugar, optional
  • 16 ounces pasta of choice; I used Mafaldine, but linguine or rigatoni would be great
  • .75 ounces fresh basil thinly sliced, a few leaves reserved for garnish
  • Salt, pepper, and crushed red pepper to taste
