Healthy Pozole Verde {Instant Pot

Ingredients
  • Cook Time: 30 minutes
  • Total Time: 45 minutes
  • 1 ½ lb pork tenderloin, trimmed and cut into bite-sized pieces (about ½")
  • salt and pepper for seasoning
  • 1 Tbs chili powder
  • 3 to 4 cloves of garlic, minced
  • 1 cup chopped white onion
  • 2 cups green bell pepper
  • ¾ cup low-sodium chicken broth
  • 2 tsp oregano
  • 1 (15 oz) can of hominy (white or golden), rinsed and drained
  • 2 Tbs cornmeal (optional - leave this out if you prefer more of a soup!)
  • ¼ to ½ cup chopped cilantro (I like a lot!)
  • subheading: For serving:
  • salsa verde (store bought or for tastiest results, make this one!)
  • avocado (optional)
  • lime wedges
