Sticky Chilli Chicken
Ingredients
  • subheading: For the chicken:
  • 300g chicken breast, diced into medium sized chunks
  • 2 tbsp cornflour
  • ½ tsp salt, pepper, chilli powder and garlic powder
  • 1 tsp paprika
  • 1 tsp sesame oil
  • subheading: For the sauce:
  • 3 garlic cloves, peeled and grated (or 1 tsp lazy garlic)
  • Thumb sized piece of ginger, peeled and grated (or 1 tsp lazy ginger)
  • 2 tbsp dark soy sauce
  • 20g tbsp chilli jam (or 2 tbsp sweet chilli sauce)
  • 2 tbsp tomato ketchup
  • 1 tbsp rice wine vinegar
  • ½ tbsp honey
  • Juice of 1 lime
  • 50ml cold water
  • subheading: For the stir fry:
  • 1 tsp sesame oil
  • 2 peppers, deseeded and diced
  • 2 chillies (1 or if you don’t like things too hot), sliced (reserve a few to dress the dish at the end)
  • 4 spring onions, sliced (reserve a few to dress the dish at the end)
  • subheading: To serve/finish:
  • 1 tsp sesame seeds
  • 100g basmati rice
