Herb and Scallion Latkes
Ingredients
  • 4 medium Russet potatoes (about 2 pounds total), scrubbed and unpeeled
  • 1 small onion, peeled
  • 4 medium scallions, thinly sliced
  • ¼ cup finely chopped fresh dill
  • ¼ cup finely chopped fresh parsley leaves
  • 15 fresh basil leaves, thinly sliced
  • 2 large eggs, lightly beaten
  • ⅓ cup all-purpose flour
  • 1 ½ teaspoons salt
  • ½ teaspoon freshly ground black pepper
  • Vegetable oil, for frying
