Fresh Raspberry Blueberry Crumble Bars
Ingredients

  • 1 Tbsp lemon juice
  • ½ tsp vanilla extract
  • ½ tsp baking powder

  • 2 cups fresh raspberries
  • 2 ½ Tbsp coconut sugar
  • subheading: Crumble Topping:
  • ½ cup rolled oats
  • ¼ cup coconut sugar
  • ¼ tsp cinnamon
  • ¼ cup flour
  • 3 Tbsp vegan butter, softened
  • 1 tsp lemon juice + pinch of zest
  • Also: 1 ½ cups fresh blueberries
  • ¾ cup fresh raspberries
  • subheading: Optional White Glaze Frosting:
  • 1 ½ cups organic powdered sugar
  • 3 to 4 Tbsp non-dairy milk
  • a few drops vanilla extract
  • note: Note: If you need to use frozen berries, you may, but the flavor will be a bit less perky and bright and whole fruity textures as plump.
