00 Viet grilled chicken

Ingredients
  • 2 lbs chicken ( breast, leg, thigh, wings. can be skinless or not)
  • 1 tbsp of olive oil
  • subheading: marinade:
  • ¼ tsp pepper
  • ½ tsp granulated garlic
  • 2 garlic clove minced
  • ¼ tsp ginger minced (optional)
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 4 tbsp scallions/green onion
  • 1 tbsp oyster sauce (optional)
  • 1 tbsp sriracha for a little kick (optional)
Steps
  1. mix everything together in a large bowl ( reserve 1 garlic clove and 2 tbsp of green onion if you are going to use a pan to cook, if "not" reserve only 1 tbsp of green onion) marinate a min of 3hrs
  2. I recommend...bbq, grill or pan. you can used oven if you want
  3. pan: on med/heat add olive oil..add 1 minced garlic clove , 1 tbsp of sliced green onion sir and let sweat, add chicken and brown both sides
  4. Turn heat to low and cover with lid for 5 to 20mins, depending on how tender or dry you want it. Cut a little peice and try and taste often during the cooking process at the end
  5. top with the remaining sliced green onion
  6. bbq/grill: on high heat brown and caramelize both sides then lower temp to a low heat and cook for another 10 to 20 mins. lid open or closed
  7. top with the remaining sliced green onion
