Corn Zucchini Fritters with Jalapeño Cream
Ingredients

  • 1 ½ C shredded zucchini (about 1 large zucchini)
  • ¼ C finely minced shallot
  • ½ C all-purpose flour
  • ½ C fine corn meal
  • 1 tbsp nutritional yeast
  • ½ tsp sea salt
  • ¼ tsp smoked paprika
  • ¼ tsp nutmeg
  • ¼ tsp ground pepper
  • ¼ C unsweetened non-dairy milk
  • 2 to 3 tbsp vegetable oil (for frying)
