Chicken, Rice, & Vegetable Soup from Aarti Singh
Ingredients
  • 1 to 2 skinless,boneless chicken breast
  • 1 c. carrots, peeled and sliced
  • 1 c. sliced celery
  • 1 c. chopped asparagus
  • 1 c. sliced white mushrooms
  • 4 c.  water
  • 4 c.  Low sodium chicken broth (or veggie broth)
  • 2c. cooked rice
  • 1 T. olive oil
  • 1 bay leaf
  • 1 to 2 T. fresh  parsley, chopped
  • pepper to taste
  • Optional; fresh or dried thyme leaves and ⅛ t. turmeric
