Cilantro Rice

Ingredients
  • Cooked rice with 1 tsp. salt per cup of rice.
  •  
  • subheading: For each cup of rice:
  • ⅔ cup cilantro, loosely packed
  • ⅓ cup chopped onion
  • ¼ cup chopped scallions
  • 1 jalapeno, seeded (or to taste)
  • 1 tbsp lime juice BIT MORE IF NEC
  • 1 tsp olive oil
Steps
  1. Puree everything but the rice in a blender, add to the cooked rice, stir well.
