Skinny Sweet Potato Enchiladas (Vegetarian + Bean Free)
Ingredients

  • 6 gluten free tortillas
  • 1 cup reduced fat grated cheese (pepper jack, Mexican blend or cheddar)

  • 1 tablespoon olive oil
  • 1 tablespoon gluten free flour
  • 2 tablespoons chilli powder (mild, medium, or hot)
  • ½ teaspoon garlic powder
  • ¼ teaspoon cumin powder
  • ¼ teaspoon oregano
  • 1 tablespoon tomato paste
  • 1 ½ cups vegetable stock
  • salt to taste

  • avocado for topping
