Roasted Tomatoes with Burrata
Ingredients
  • 2 pints grape or cherry tomatoes (approx 4 cups)
  • 2 garlic cloves smashed and left unpeeled
  • ½ to 1 teaspoon dried herbs (I like to use some rosemary or thyme or oregano or Italian seasoning)
  • ¼ teaspoon dried chili flakes
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar (optional)
  • Pinch of salt and ground black pepper
  • Fresh basil or parsley for serving (any fresh herbs you prefer)
  • subheading: For Serving:
  • 8 ounces burrata cheese (at room temperature) or goat cheese
  • Grilled bread, crackers, crisps, crostini, crackers
