Ingredients
  • 2¼ cups self-raising flour
  • 1 tablespoon ground ginger
  • 1 teaspoon baking powder
  • ¼ teaspoon bicarbonate of soda
  • ⅔ cup extra virgin olive oil
  • ¾ cup honey
  • 2 teaspoons vanilla extract
  • 1 egg, lightly beaten
  • 2 teaspoons finely grated lemon rind
  • ½ cup roughly chopped walnuts (or other nuts like pecans, pistachios, cashews, macadamias etc)
