Ingredients
  • 3 c diced boiled potatoes
  • 2 T oil sub (bean juice)
  • 2 T. vinegar
  • salt
  • ½ c sliced ripe olives
  • ¼ c. diced dill pickle
  • ¼ c. shredded carrot
  • 2 T pimento or red pepper
  • 2 T green bell pepper
  • 2 tsp diced onion
  • 1 tsp prepared mustard
  • ¼ to ½ c mayo
Steps
  1. Mix together first 3 ingredients, let cool
  2. Add remaining ingredients
  3. Mix with mayo, chill
