Spaghetti Sauce for Canning
Ingredients
  • 18 lbs fresh tomatoes (which should equal to 4 gallons washed, peeled and chopped tomatoes)
  • 3 cups onions, chopped
  • 4 to 8 garlic cloves, roasted
  • 1 to 4 teaspoon olive oil
  • 1⁄8 - 1⁄4 cup canning salt, start with less and add more to taste
  • 6 to 8 tablespoons sugar, start with less and add more to taste
  • 2 tablespoons dried oregano leaves
  • 1 tablespoon dried basil leaves
  • 2 (6 ounce) cans tomato paste
