Leftover Cornbread Breakfast Casserole
Ingredients
  • 1 roll (16 ounces) turkey breakfast sausage
  • Nonstick cooking spray
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (4 ounces) diced green chiles, drained
  • 4 green onions, thinly sliced
  • 2 garlic cloves, minced
  • 3 cups cornbread, coarsely crumbled
  • 2 cups shredded Mexican-style taco cheese
  • 8 eggs
  • ¾ cup whole milk
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • Chopped fresh parsley or cilantro, for serving (optional)
  • Hot sauce, for serving (optional)
