  • ½ teaspoon Chinese five spice powder
  • ½ teaspoon ground ginger
  • 3 pounds boneless pork shoulder roast
  • 2   teaspoons Diamond Crystal kosher if using a finer grain salt, only use 1 teaspoon
  • 2 scallions trimmed and thinly sliced (optional garnish)
