Simple Mediterranean Quinoa
Ingredients
  • 1 tablespoon cooking oil (I use grapeseed)
  • 1 medium yellow or white onion, diced
  • 4 cloves garlic, minced
  • 2 cups spinach, chopped
  • 1 cup quinoa
  • 2 cups water
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon lemon juice
  • 3 tablespoons chopped sun-dried tomatoes
  • ½ cup crumbled feta cheese
