Stuffed Italian Zucchini Boats

Ingredients
  • 4 medium large zucchini
  • 1 lb 93% ground turkey
  • 8oz marinara sauce (I used Raos Tomato & Basil sauce)
  • ½ cup diced onion
  • 1 tbsp minced garlic
  • 1 tsp Italian seasoning
  • ¼ tsp red pepper flakes
  • ½ cup FF mozzarella
  • ½ cup 2% mozzarella
Steps
  1. Preheat oven to 375. Slice zucchini in half lengthwise. Hollow out with a spoon and set guts aside. Place zucchini on a sprayed baking sheet covered with foil. Spray tops of zucchini with olive oil and sprinkle with salt and pepper. Bake for 10 minutes.
  2. Spray a large skillet with olive oil spray. Add onion and garlic. Sauté for 2 minutes. Add ground turkey, cook until browned. Add zucchini guts. Pour in sauce, Italian seasoning, and red pepper flakes. Simmer for 5 to 10 minutes.
  3. Carefully fill each zucchini with meat sauce. Return to oven and bake 20 minutes. Top with mozzarella cheese and garnish with parsley if desired. Heat an additional 5 minutes.
Notes
  • 4sp each
  • Be sure to calculate accordingly for a different brand sauce. Raos is low in points with no added sugar. Or you could make your own!
