  • ¼ teaspoon freshly ground black pepper
  • 1 ½ tablespoon olive oil
  • 3 cloves shallots, thinly sliced
  • 2 cloves garlic, minced
  • ½ cup white wine or low sodium chicken broth
  • ¼ cup sour cream
  • ¼ cup heavy cream
  • 1 tablespoon butter
  • salt, to taste
  • 6 ounces fresh baby spinach
