Ingredients
  • This was for 3 pork chops. I doubled this for 1.25 lbs of chicken tenders, and had leftover (make a batch and add as you go). The net carbs are negligible.
  • ¼ cup VKF
  • ½ cup Breadcrumbs (I'll link Victoria’s Keto Kitchen recipe below...I've used 2.0 and VKF and they work great)
  • Season as you prefer...I usually use salt, pepper, garlic, smoked paprika as a base.
  • ½ tsp gelatin (helps breading to stick)
  • 1 tsp baking powder (helps with crispiness)
  • ¼ cup lupin flakes...blitzed quickly in a blender...not to a powder...and then I throw in a couple tablespoons of whole flakes.
  • Optional: 1 tbsp protein powder
  • I mix all of this in a bag, and add what I think I'll need...less waste this way.
  • I dip the chops in a mixture of an egg and little bit of cream. Then coat well with breading.
  • I dab (with a brush) melted butter on both sides and then put in the air fryer. Turning every so often until done. If using the oven, put on a rack so they don't get soggy. I have tried using avocado spray instead of butter, and they work...but not the same.
