  • 2 cloves garlic, minced
  • ½ cup white balsamic vinegar
  • Kosher salt and freshly ground black pepper to taste

  • ½ cup shaved fresh fennel
  • 1 cup shaved radishes
  • 1 cup kalamata olives, pitted and slivered
  • 2 cups cherry tomatoes, halved
  • 3 cups arugula
  • 2 cups Parmesan cheese shavings
