Ingredients
  • 2 Chicken Breasts butterflied, pounded and seasoned with salt and black pepper
  • 1 lb. Baby Bella Mushrooms cleaned and thinly sliced
  • 1 lb. Asparagus
  • 1 Shallot minced
  • 2 Garlic Cloves minced
  • 2 oz. Butter unsalted
  • 1 cup Mozzarella Cheese shredded
  • 3 cups Chicken Stock
  • ¾ cup Heavy Cream
  • ½ cup Madeira Wine (I used Opici Vineyards)
  • Handful Parsley chopped
  • Extra Virgin Olive Oil
  • Sea Salt and Black Pepper to taste
