Seneca White Corn No-Bake Energy Balls
Ingredients
  • 1 ½ cups quick oats
  • 1 cup roasted white corn flour (see Tip)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • ½ cup natural peanut butter
  • ¼ cup unsweetened applesauce
  • 2 tablespoons pure maple syrup
  • 2 tablespoons water
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened coconut flakes, plus more for rolling
  • ½ cup dried fruit, such as raisins and/or currants
  • ½ cup unsalted roasted mixed chopped nuts, such as pecans, almonds, walnuts and/or hazelnuts
