Teriyaki Chicken

Ingredients
  • 1 tbsp oil
  • ¼ onion sliced into thin strips
  • 2 chicken thigh fillets, cut into strips
  • ½ bunch broccolini
  • ½ bunch asparagus
  • 1 green onion sliced thinly, to garnish
  • subheading: Teriyaki Sauce:
  • ¼ cup soy sauce
  • ¼ cup water
  • 1 to 2 tbsp brown sweetener
  • 1 tsp garlic powder
  • 2 tsp sesame oil
  • 1 tbsp ginger paste
  • ¼ tsp xanthan gum
Steps
  1. For the sauce; place all ingredients into a small saucepan over moderate heat and simmer until sauce has reduced by half.
  2. Reserve. This sauce makes enough for 4 serves.
  3. Heat a pan over medium-high heat.
  4. Add the avocado oil, onion and chicken strips.
  5. Stir fry until onion and chicken have browned.
  6. Stir through vegetables (if using) and half of the Teriyaki sauce.
  7. Stir fry until the sauce is thickened.
