  • 1 cup fresh dried apricots (180g), see note
  • ¼ cup oats (quick oats, oat flour, or rolled oats)
  • ¼ cup dessicated unsweetened coconut (plus more for rolling, optional)
  • 1 tablespoon chia seeds
  • 1 teaspoon cinnamon
  • teaspoon vanilla extract
  • Water, as needed
