MY Instant Pot Keilbasa Cabbage Soup

Ingredients
  • 4 "long" carrots, sliced. cut the fat end thin
  • 2 ¼" sliced onion, semi chopped
  • 2 heaping t. refrigerated minced garlic
  • 2T butter
  • 14 oz sliced keilbasa/polish sausage
  • ½ head cabbage (med size)*
  • 2 c beef broth *
  • 2 c water
  • 2 t. worcestershire sauce
  • 2 bay leaves
  • old bay seasoning
  • 1 c Jasmine rice
  • 1 14 oz can diced tomato, used hunts roasted garlic
  • 1 c water
Steps
  1. saute onion and carotts in butter, 10 min or so. I used a glass cover and let sit a bit
  2. add garlic, stir, covered again and let saute 3 min or so
  3. Add keilbasa, stir, covered with glass lid again for another 3 min or so
  4. Add some broth to scrape bottom of liner. It was boiling after 2 min. Turned saute off
  5. Add rest of broth, water, worcestershire, rice, can tomato, cabbage on top*
  6. Set for manual 10 min. Took about 20 min to pressure.
  7. QR, took about 3 min
Notes
  • Cabbage: ½ head cut in ½, then ⅓. chopped into about 2" pieces, cut out the hard core
  • 2 c beef broth I used was from the freezer from leftover pork meal, I assume, cuz it smelled sweet. Soup had slight sweet taste. I liked it. Hubby added salt and pepper to his.
  • Cabbage last to go in, on top off all, not submerged. I forgot the Old Bay so sprinkled on top of cabbage.
  • I added 1 c more water since it looked like it needed more lol
  • 3 big bowls served, 8 c leftover. Will need to add water when reheating.
