Mushroom and Black Bean Burgers with Balsamic-Glazed Onions
Ingredients
  • One (15-ounce) can no-salt-added black beans, drained and rinsed
  • One (13.25-ounce) can mushrooms (pieces and stems), drained and rinsed
  • ½ cup rolled old-fashioned oats
  • 1 tablespoon tamari or soy sauce
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon fine salt, divided
  • 3 tablespoons vegetable oil, divided
  • 1 medium yellow onion (9 ounces), halved and thinly sliced
  • 1 tablespoon balsamic vinegar
  • 4 hamburger buns
  • Toppings such as cheese, lettuce, slices of tomato, pickles, mustard and/or ketchup (optional)
