My Best Curry Chicken Salad
Ingredients

  • 2 tablespoons fresh Italian parsley chopped
  • ¼ cup walnuts chopped & roasted(optional)
  • ½ cup celery sliced
  • Juice of half a lemon
  • Kosher salt & fresh pepper

  • ¼ cup red onion finely diced
  • 2 cloves garlic minced
  • 1 teaspoon freshly grated ginger peeled
  • 2 teaspoons yellow curry powder
  • 1 teaspoon ground turmeric
  • ¼ cup chicken stock/broth
  • 1 cup full fat mayo sugar free
  • Zest & juice of half a lime
  • 2 to 3 drops of liquid stevia
  • Kosher salt & fresh pepper
  • Olive oil
