Hawaiian Potato Macaroni Salad Recipe (Potato Mac Salad)
Ingredients
  • 1 cup dried macaroni noodles
  • 1 ½ cups water
  • 4 medium russet or red potatoes, peeled and cubed (2 inches)*
  • 4 eggs
  • 1 tablespoon vinegar
  • 1 tablespoon garlic salt
  • ½ teaspoon black pepper
  • 2 ½ cups of Best Foods mayonnaise**
  • 1 cup frozen peas, thawed and drained
  • ½ cup shredded carrots
  • ¼ cup chopped red or green onion (optional)

  • The cooking time will vary depending on the size of the potato chunks. Cubing the potatoes smaller allows for a quicker cooking time in the Instant Pot.

  • note: Can substitute Hellmens mayonnaise which is the East coast brand name for Best Foods. You can also substitute another brand of mayonnaise. The large quantity of mayonnaise is authentic to Hawaiian recipes which makes the salad extra creamy.  If you wish to use less mayonnaise, start with 1 cup and then add ¼ cup at a time until the salad reaches your preferred moistness.
