Hamburger Vegetable Soup (Mikki's)
made with Costco organic (4 pack) frozen vegetables

Ingredients
  • ½ lb hamburger (cooked ahead or sauté before making soup) with normal seasonings
  • 1 package (of the 4 pack) cauliflower
  • 1 package (of the 4 pack) root vegetables
  • 1 package (of the 4 pack) butternut squash
  • 1 large onion chopped
  • about 1 cup celery chopped
  • 1 to 2 zucchini chopped
  • 4 to 6 cloves of garlic chopped
  • ½ to 1 cup yellow or orange lentils
  • 2 cans or one large of diced tomatoes
  • 12 cups chicken broth (I used 8 cups and then 4 cups water and 4 tsp better then bouillon)
  • 2 TBS Costco no salt
  • 2 tsp Fenugreek
  • 2 ½ tsp salt
  • 1 to 2 tsp Italian seasoning
  • 2 tsp garlic powder
  • ½ tsp pepper
  • greens (spinach, kale, chard, cabbage) chopped and added after soup has been opened. Optional.
Steps
  1. If cooking hamburger meat go ahead and sauté onions, garlic and celery with it. If meat already cooked sauté onion, garlic and celery and then add all other ingredients to the pot.
  2. Cook on Manual or Pressure 5 min. Let pressure off immediately. Use immersible blender just a few times to thicken up soup. Add chopped greens if you have them now.
Notes
  • If using a 6 qt I'm guessing you might want to only use 2 packages of vegetables, 1 can of tomatoes and 8 cups of broth. Cut back about a ⅓ on the seasonings. Just guessing here.
