My now deceased mother-in-law turned her favorite cake recipe, "Hot Milk Cake,
into a coffee cake by omitting the frosting, including the raisins, & sprinkling the batter with sugar. I found her changes written into the margin of one of her cookbooks, as well as written on a recipe card she tucked into a cookbook which she had given to Hubby on his birthday during his single days in 1983.

Ingredients
- 1 c. - cake flour
- 1 tsp. - baking powder
- ½ c. - milk
- 1 tbsp. - unsalted butter
- 1 tsp. - vanilla
- 2 - eggs
- sugar
- raisins
Steps
- Preheat oven to 350° F & line 2 9-in. cake pans with parchment paper.
- Scald milk in top of double boiler; then, stir in butter & vanilla.
- Beat eggs till thick & foamy (app. 3-mins.). Gradually blend in 1-c. sugar, beating constantly; then, beat 4 more minutes.
- Quickly stir in flour & baking powder, till just mixed; then, stir in milk mixture & raisins.
- Pour batter into pans & sprinkle sugar over top of batter. Bake 35-mins..
- Let cake stand in pans for 15-mins. before removing.
