Ingredients
  • 1 cup chopped sweet yellow onion
  • 1 large garlic clove, minced
  • 1 pound broccoli, florets cut into 3" pieces, stalks sliced ½" thick
  • 1 cup baby spinach or power greens mix
  • ⅓ cup roasted red bell pepper, leave whole
  • 2 cups veggie broth
  • 2 tablespoons cashews, almonds, or hemp seeds
  • 2 tablespoons nutritional yeast (optional)
  • 3 slices multi-grain bread, toasted golden brown, cut into croutons (optional)

Steps
  1. Press [SAUTE] button, set heat to [Normal].  Once the inner pot is hot, add onion and cook 4 minutes or until it begins to soften. Add garlic, cook for 30 seconds. Add broccoli, spinach or greens, bell pepper,  and 1 cup veggie broth.
  2. Lock on the lid. Cancel sauté mode. Press [PRESSURE COOK], set cook time for 1 minute, cancel Keep Warm mode. As soon as the cooking is finished, release pressure from the pot by turning steam release handle to Sealing.
  3. Carefully transfer hot vegetables and cooking liquid to a blender. Add remaining veggie broth, nut or seeds of your choice, and nutritional yeast. Blend smooth. Transfer soup back to the inner pot. Press [Keep Warm] button to keep warm until ready to serve. Top individual portions with croutons.
