Ingredients
  • 1 pound (about 450 grams) yams
  • ¾ pound (about 340 grams) red potatoes
  • ½ pound (about 225 grams) beets (red or golden)
  • ½ pound (about 225 grams) large carrots
  • 1 medium-sized parsnip
  • ½ red onion
  • 6 whole garlic cloves
  • ¼ cup (about 60 ml) extra virgin olive oil
  • 2 tbsp fresh thyme leaves
  • 5 sprigs fresh rosemary
  • 1 tsp ground cumin
  • 1 tsp kosher salt (or more to taste)
  • ¼ tsp black pepper (or more to taste)
