  • 15 whole graham crackers, broken into 1-inch pieces
  • ¼ cup (1 ¾ ounces) plus 1 ⅓ cups (9 ⅓ ounces) sugar
  • 1 teaspoon ground ginger
  • 8 tablespoons butter, melted
  • 1 pound cream cheese, softened
  • 1 tablespoon lemon juice
  • 2 teaspoons vanilla extract
  • 4 large eggs, room temperature
