Black Bean Quinoa Tabbouleh Salad
Ingredients
  • 1 cup Quinoa, rinsed
  • 2 cups Water
  • 1 small English Cucumber, small chopped
  • 1 can 15 ounces black beans, rinsed and drained
  • 3 to 4 Green Onions, chopped
  • ¼ cup Lemon Juice
  • 2 tbsp. Olive Oil
  • 2 Cups Cherry or Grape Tomatoes, chopped, 1 pint
  • 1 tsp. Salt, divided
  • ½ tsp. Pepper
  • A bunch of fresh parsley, finely chopped
