Buche De Noel (Chocolate Chestnut Log)
Ingredients

  • 6 large eggs
  • 5 oz (150 g) caster sugar
  • 2 oz (50 g) cocoa powder, sifted
  • a little icing sugar
  • subheading: For the filling:
  • 1 x 8¾ oz (240 g) tin crème de marrons (sweetened chestnut purée)
  • 4 whole candied chestnuts (marrons glacés), roughly chopped
  • 1 tablespoon double cream
  • subheading: For the Christmas snow decoration:
  • 2 oz (50 g) dark chocolate (75 per cent cocoa solids)
  • 10 fl oz (275ml) double cream less 1 teaspoon (see above)
