Ingredients
  • First Cook the chicken
  •  
  • 5 frozen chicken tenderloins
  • 1 cup of chicken broth
  • season with chili powder, cumin, and oregano
  •  
  • Add the rest
  •  
  • 1 Onion
  • 1 tsp Garlic
  • 1 Sweet pepper
  • Vigo yellow rice
  • Chicken broth
Steps
  1. Put the seasoned chicken with broth.  Cook on high pressure for 15 minutes, natural release for 10 minutes, then shred chicken and pour off liquid.
  2. Cool the lid and press saute on normal. Wait for HOT message to add oil.
  3. Add EVOO and saute the chicken with onions, garlic, and sweet peppers.
  4. Add a can of rotel with green chili’s, a bag of vigo yellow rice with seasonings, and the same amount of chicken broth as rice.
  5. Then cook high pressure for 6 minutes with a natural release.
Notes
  • I made the best meal so far in the instant pot last night.  It was .     This was fantastic on soft taco shells with cheese and sour cream.  And we had left overs today just as it is with a bit of cheese on top.  It is great!
