Lentil, Chickpea, and Brown Rice Loaf (Vegan, Oil-Free, GF)
Ingredients
  • 1 cups of dried brown lentils
  • 1 can of drained and rinsed chickpeas
  • ½ cup of cooked brown rice (breadcrumbs or rolled oats will be fine)
  • 1 tablespoon of ground flax seeds mixed with 3 tablespoons of water
  • 1 large shredded carrot
  • 1 large onion diced
  • ½ of a large shredded zucchini or 1 large celery stalk diced
  • 2 to 3 cloves of garlic minced
  • 1 tablespoon of a mushroom powder
  • ½ tablespoon of a dark miso paste
  • 2 teaspoons of oregano
  • 2 teaspoons of basil
  • 2 teaspoons of paprika
  • A sauce topping: I used a balsamic glaze reduction. Feel free to use a tomato sauce, or a BBQ glaze!
