Smoked Mackerel & leek risotto

Ingredients
- Table spoon olive oil
- Knob of butter
- 1 medium onion
- 1 whole leek
- 3 largish spring onions
- 250g risotto rice
- 700ml hot water with -
- 1 veg stock cube stirred in.
- Handful frozen peas
- Large handful of fresh spinach leaves
- 200g Ready to eat Smoked Mackerel fillets
- Squeeze of fresh lemon juice
Steps
- 1, Sauteed chopped onion, leek, spring onions in the oil and butter. Until tender
- 2, stir in the rice until coated.
- 3, Add the water/stock
- 4, 10mins on High pressure, with QPR
- 5, Stir in fresh spinach and frozen peas, spinach will wilt quickly.
- 6, flake in smoked Mackerel fillets.
- 7, small squeeze of lemon to taste.
Notes
- Easy peazy, and I liked it, wife not so keen on smoked Mackerel (too strong) will attempt again with smoked haddock next time.
