Smoked Mackerel & leek risotto
Ingredients
  • Table spoon olive oil
  • Knob of butter
  • 1 medium onion
  • 1 whole leek
  • 3 largish spring onions
  • 250g risotto rice
  • 700ml hot water with -
  • 1 veg stock cube stirred in.
  • Handful frozen peas
  • Large handful of fresh spinach leaves
  • 200g Ready to eat Smoked Mackerel fillets
  • Squeeze of fresh lemon juice
Steps
  1. 1, Sauteed chopped onion, leek, spring onions in the oil and butter. Until tender
  2. 2, stir in the rice until coated.
  3. 3, Add the water/stock
  4. 4, 10mins on High pressure, with QPR
  5. 5, Stir in fresh spinach and frozen peas, spinach will wilt quickly.
  6. 6, flake in smoked Mackerel fillets.
  7. 7, small squeeze of lemon to taste.
Notes
  • Easy peazy, and I liked it, wife not so keen on smoked Mackerel (too strong) will attempt again with smoked haddock next time.
