Lemon Velvet Cake with Lemon Cream Cheese Frosting
Ingredients

  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1¾ c granulated sugar
  • ¾ c vegetable oil
  • ¼ c butter-flavored shortening
  • 2 eggs
  • 1 to 2 tsp pure vanilla extract
  • 1 tbsp pure lemon extract
  • 1 heaping tsp lemon zest, (from 1 to 2 lemons)
  • 1 c buttermilk
  • ½ tsp white distilled vinegar
  • ⅓ c hot lemon water, (hot water mixed with 2 tbsp fresh lemon juice)
  • 4 to 6 drops yellow food coloring

  • 2 (8 oz) packages cream cheese, room temperature
  • 8 tbsp unsalted butter, room temperature
  • 1½ tsp pure vanilla extract
  • 1½ tsp pure lemon extract
  • 1½ heaping tsp lemon zest, (from 2 lemons)
  • 4 to 5 c powdered sugar, sifted
  • 1 to 2 tsp lemon juice, (if needed)
  • 4 to 5 drops yellow food coloring
