Low Carb Wraps

Ingredients
  • 1 cup of almond meal
  • 1 cup of arrowroot or tapioca flour
  • 125ml (½ cup) of coconut milk
  • 125ml (½ cup) of filtered water
  • pinch of salt
  • coconut oil/olive oil/butter for frying
Steps
  1. Combine all ingredients for the Wrap except the oil and mix well to form a smooth batter.
  2. Melt the oil in a small non stick frying pan.
  3. Add a quarter of the batter and swirl the pan to ensure it evenly coats the base, use the back of a spool to help you.
  4. Cook for 2 to 3 minutes then carefully flip with a spatula and cook for a further 2 mins or until golden brown.
  5. Repeat with remaining batter, you may need to add some more coconut oil between batches.
  6. Keep aside in a clean towel to keep warm.
