  • 4 cups vegetable broth
  • ¼ cup lime juice
  • 2 tsp powdered ginger
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tbsp soy sauce
  • ¼ cup coconut milk regular full fat or reduced-fat
  • ¼ cup peanut butter
  • 1 tbsp miso paste
  • 2 tbsp dried cilantro
  • ½ tsp crushed red pepper flakes or more, as desired
  • 2 cups spinach loosely packed
  • 2 to 4 cups additional water
  • ½ tsp black pepper or to taste
  • salt to taste
  • 8 oz pad thai rice noodles
  • ⅔ cup bean sprouts
