Ingredients
  • ½ pound ground beef, not too lean
  • 2 tablespoons cooking oil, scant measurement, bacon fat adds a nice flavor, peanut oil is my 2nd choice
  • 2 tablespoons flour, heaping measure
  • 2 cups whole milk, plus a little if it gets too thick
  • dash of salt, to taste
  • Pepper, to taste
  • 8 slices of dry toast
  • Tabasco for serving
Steps
  1. Brown the ground beef, remove from the pan, drain, and set the ground beef aside.
  2. Add the oil to the pan, add the flour stirring constantly for a few minutes. You are making a blonde roux. You want dirty blonde color, not light brown. Add the milk, stirring to combine. You don't need to know that you just made a Bechamel sauce.
  3. Add the beef back to the pan, season with salt and pepper. One last good mix. Taste to adjust seasoning. Serve over toast with a bottle of Tabasco on the table.
  4. Serving with over easy eggs seems right.
