Ingredients
- ½ pound ground beef, not too lean
- 2 tablespoons cooking oil, scant measurement, bacon fat adds a nice flavor, peanut oil is my 2nd choice
- 2 tablespoons flour, heaping measure
- 2 cups whole milk, plus a little if it gets too thick
- dash of salt, to taste
- Pepper, to taste
- 8 slices of dry toast
- Tabasco for serving
Steps
- Brown the ground beef, remove from the pan, drain, and set the ground beef aside.
- Add the oil to the pan, add the flour stirring constantly for a few minutes. You are making a blonde roux. You want dirty blonde color, not light brown. Add the milk, stirring to combine. You don't need to know that you just made a Bechamel sauce.
- Add the beef back to the pan, season with salt and pepper. One last good mix. Taste to adjust seasoning. Serve over toast with a bottle of Tabasco on the table.
- Serving with over easy eggs seems right.
