Stout steak rolls with spice ale dipping sauce

Ingredients
- 1½ lbs top sirloin steak cut in ribbons. ¾ inches wide
- 3 Tbsp olive oil
- 1 Tbsp Cajun spice
- 8 flour tortillas, 8” each
- 4 individual string cheese strips, cut in half lengthwise
- subheading: MARINADE:
- 1 cup stout beer
- 2 Tbsp soy sauce
- 2 Tbsp barbecue sauce
- subheading: DIPPING SAUCE:
- ½ cup mayonnaise
- 1 tsp garlic and parsley salt
- 1 tsp chili powder
- 1 tsp cayenne pepper
- 2 Tbsp India pale ale beer
Steps
- Combine meat and marinade in large bowl.
- Cover and refrigerate 4 to 24 hours.
- In small bowl mix ingredients for dipping sauce stir well, refrigerate.
- In large frying pan over medium high heat warm olive oil. Stir in Cajun spice.
- Add steak and ⅓ cup of marinade; stir fry until cooked throughout, about 2 to 5 minutes. Remove from heat and cool.
- On edge of each tortilla, place one piece of cut string chees and ⅛ portion of steak; roll tightly. Repeat with rest of ingredients, wrap and refrigerate until ready to use.
- Place tortilla rolls on grill or under broiler. On grill or under broiler cook, turning until browned on all sides for a total of about 4 minutes.
- Serve with dipping sauce.
