Stout steak rolls with spice ale dipping sauce
Ingredients
  • 1½ lbs top sirloin steak cut in ribbons. ¾ inches wide
  • 3 Tbsp olive oil
  • 1 Tbsp Cajun spice
  • 8 flour tortillas, 8” each
  • 4 individual string cheese strips, cut in half lengthwise
  • subheading: MARINADE:
  • 1 cup stout beer
  • 2 Tbsp soy sauce
  • 2 Tbsp barbecue sauce
  • subheading: DIPPING SAUCE:
  • ½ cup mayonnaise
  • 1 tsp garlic and parsley salt
  • 1 tsp chili powder
  • 1 tsp cayenne pepper
  • 2 Tbsp India pale ale beer
Steps
  1. Combine meat and marinade in large bowl.
  2. Cover and refrigerate 4 to 24 hours.
  3. In small bowl mix ingredients for dipping sauce stir well, refrigerate.
  4. In large frying pan over medium high heat warm olive oil. Stir in Cajun spice.
  5. Add steak and ⅓ cup of marinade; stir fry until cooked throughout, about 2 to 5 minutes. Remove from heat and cool.
  6. On edge of each tortilla, place one piece of cut string chees and ⅛ portion of steak; roll tightly. Repeat with rest of ingredients, wrap and refrigerate until ready to use.
  7. Place tortilla rolls on grill or under broiler. On grill or under broiler cook, turning until browned on all sides for a total of about 4 minutes.
  8. Serve with dipping sauce.
