Vegan Cookie Dough Bars with Chocolate Chips
Ingredients
  • subheading: FOR THE COOKIE DOUGH FILLING:
  • ½ cup pitted medjool dates
  • 1 cup old-fashioned rolled oats - certified gluten free if needed
  • ¾ cup  almond flour
  • 3 tablespoons unsalted peanut butter - almond butter, or cashew butter (I used the natural, drippy kind that is stored in the refrigerator)
  • 2 tablespoons pure maple syrup
  • 1 tablespoon pure vanilla extract
  • ¼ teaspoon kosher salt
  • ⅓ cup semisweet mini chocolate chips - about 2 ounces; dairy free if needed
  • subheading: FOR THE CHOCOLATE TOPPING (OPTIONAL):
  • ⅔ cup chopped semisweet chocolate or chocolate chips - about 4 ounces; dairy free if needed
  • 1  teaspoon coconut oil
